In this episode, we invited Barrett Tillman--head of brewing operations at Deep Ellum Brewing Co. in Dallas--in the studio to tell us about some of the things DEBC has recently been up to and their 6th year of the Labor of Love homebrewing competition. Then we continue our Belgian beer discussion by diving into BJCP category 26C, the Tripel style. Plus, we also talk about how you can measure your ABV using your refractometer and an app or online calculator. 

 The BJCP describes the Belgian Tripel as:

"A pale, somewhat spicy, dry, strong Trappist ale with a pleasant rounded malt flavor and firm bitterness. Quite aromatic, with spicy, fruity, and light alcohol notes combining with the supportive clean malt character to produce a surprisingly drinkable beverage considering the high alcohol level."

It's a favorite style around Texas Brewing Inc. and our Texas Twister has always been a customer favorite as well. They may seem like an easy style to brew, but to really get the most out of them you should definitely be prepared with a yeast starter or multiple packs of dry or liquid yeast, use yeast nutrient during your boil, and be sure to oxygenate prior to fermentation. In fact, you might consider another shot of oxygen 12-18 hours after pitching. Finally, we've often found that we got our best results by bottle conditioning this style of beer. Kegging definitely works, but with the bottle you tend to get the long lasting, rocky, white head of foam that is indicative of the style.
