Safbrew T-58 is a dry Belgian yeast known to produce bubblegum and banana fruitiness along with some spice and pepper notes. Fermentation temperatures are important to the balance of fruity esters and peppery phenolics and can be manipulated through temperature control. Brewers will find more fruity esters near the higher side of fermenation temp with spice coming out on the lower end of fermentation.

Flocculation: Medium
Optimum Fermentation Temperature Range: 59 - 75
Alcohol Tolerance: Excellent performance in beers with alcohol contents of up to 8.5% v/v but can ferment up to 11.5% v/v.
Also recommended for bottle-conditioning of beers.
