This granulated powder releases sulfur dioxide when dissolved in liquid. For winemaking, it is added in small doses directly to fresh juices 24 hours before adding yeast to prevent wild yeast, bacteria growth and oxidation.
Potassium Bisulfite is also used in stronger doses with water as an equipment sanitizer. Sanitize fermenting vessels, hydrometers, wine bottles, hoses or any other glass, metal, plastic or wood that comes into contact with your wine.
Suggested usage for winemaking: 1/8 tsp / gallon = approx. 100 ppm free SO2.
Suggested usage for equipment sanitation: 3 tbsp per gallon
