A German ale yeast that forms a large firm head during fermentation. Low Esters make it suitable for brewing Belgian type wheat beers. Low attenuation provides for good mouthfeel. Attenuation: Low Flocculation: High Temperature Range: 54-77F (Ideally 59-68F)

Fast and Furious! Review by Kevin
I've made a number of ales with K-97, and they have all turned out superbly. Granted, I should have let it sit for a while longer, or perhaps cold-crashed before kegging . . . the low flocculation rate usually turned my beers very hazy... if you over-hop you can make a nice NEIPA with this yeast. The flavor was fantastic and I certainly keep a few packs around for that end-of-summer brew.
The only word of caution with this yeast - it is very fast and very active, so definitely use a blow-off tube. Depending on how full your fermenter is, the krausen will definitely clog and push out an air-lock! (Posted on 9/23/2019)

Great new yeast Review by Allen
Apparently this has been available for commercial brewers for a long time. I used it for a blond/kolsch and was pleased with the results. It is clean when fermented at 60 and I got good attenuation. I lagered it so I didn't have to worry about flocculation. I'm going to use it on all of my pseudo lagers mashing at 148. (Posted on 8/9/2016)
