Campden Tablets: Potassium Metabisulfite (KMS) prevents wild yeast, bacteria growth, and oxidation in your wine. The convenient tablet form takes the guesswork out of measuring.
Suggested Usage: 1 tablet per gallon equals 30 ppm free SO2. Each tablet is .5g. Approximately 110 tablets.

My brewing water was giving me some awful "band-aid" and plastic-y aromas (I am more sensitive to these phenols than I realized) since moving to Texas. Considered upping the filtration power ($$$ option), but then read that simply using half of one of these tabs might do the trick. For a few bucks, if it worked, I would get 200+ batches that I couldn't blame the water for any off-flavors. Well, I am 2 batches in using campden, and they are clean as can be. Already well worth the money, and the 10 seconds of "effort" it takes to cut a tab in half and grind it up prior to mashing. If you have some dreaded chloramines (that your city allows levels to fluctuate dramatically, which is healthy, technically, but ruins your beer) give this stuff a try immediately!
