BRY-97 was selected from the Seibel Institute Culture Collection.This yeast can be a vigorous fermenter. Yeast flavor is generally neutral with slight esters. Because of high flocculation, it can soften hop character in the finished beer. A great yeast for not only IPAs and Pale Ales, but also a range of different ales. Attenuation: Medium to High Flocculation: High Temperature Range: 59-72F

Great Pale Ales Review by DF
This yeast is a bit of a slow starter...don't let it freak you out! It can sometimes take a day and a half before you start to see a good krausen, but it then finishes pretty quickly, and attenuates well. I use this yeast for a bunch of different pale ale recipes.... (Posted on 8/9/2016)
